Head of Operations Randy Carter formed Holy Smoke in 2007 with the soul purpose of creating a first class barbeque catering service in San Diego County. He has worked a variety of first class dining establishments including; Dolce in Newport Beach, Tutti Mare in Newport Beach, Crivello in Murrieta, and the Wessex hotel in Winchester England. Randy and his wife Jennifer are dedicated to providing superior customer service, and an unforgettable dining experience.
Head Chef David Van Schaik has been working in the service industry for over 25 years. He began working in 1986 at a Black Angus restaurant, where he quickly rose to be head chef and kitchen manager. After spending 10 years with them, Dave has worked as a chef, and customer service manager in some of the top Country clubs in the country including; the Arizona Biltmore, Telluride Ski Resort, and Las Sendas Golf Club. As head chef, Dave is dedicated to providing a dining experience that can only be had with Holy Smoke BBQ.
